No Meat Cook Up Rice 

In Guyana, Cook-up Rice, a one pot rice dish is known to be the must have dish on Old Year’s Night (New Year’s Eve). Traditionally meat such as pork, lamb or beef is used in the dish as well as a range of vegetables. This recipe is a vegetarian option.

Ingredients

  • 300g/10½oz long grain rice  
  • 1 tbsp vegetable or rapeseed oil
  • 2–3 garlic cloves
  • 1 onion finely chopped.
  • 1 tsp grated ginger  
  • 1 x 400g/14oz tin cooked pigeon peas aka gungo peas, (black-eyed peas) or red kidney beans), drained.
  • 200g/7oz pumpkin or seasonal squash, peeled and chopped into chunks.
  • 2 carrots peeled and cubed.
  • 2 okra, sliced
  • 150g / 5½oz baby spinach 
  • 1 tin of coconut milk 
  • few sprigs thyme 
  • 1 chilli scotch bonnet finely chopped.
  • 2 tsp salt 
  • 1 tsp freshly ground black pepper
  • 15g/½oz coriander, roughly chopped

Method

  1. “wash” the rice.  Tip the rice into a bowl and rinse with cold water. Repeat two- or three-times until the water is clear. Drain, then set aside.
  2. Heat the oil in a pan over a low heat stir in the garlic, onion, and ginger.
  3. Add the drained peas, pumpkin, carrots, okra and baby spinach. Mix well to make sure the vegetables don’t stick to the pan.
  4. Before the spinach starts to wilt, add 250ml/9fl oz water with the coconut milk, thyme sprigs and Scotch bonnet. Increase the heat to medium-high and bring to a simmer.
  5. Season with the salt and pepper, then add the rice. Stir until everything is mixed and the veg is evenly distributed throughout the rice. Reduce the heat to low, cover and leave to simmer for 20 minutes or until all the liquid has evaporated.
  6. Turn off the heat and leave the pan covered for a further 20 minutes. The steam will finish cooking the rice.
  7. Scatter over the roughly chopped coriander and serve.

A suggestion.

If you would like less heat. leave the scotch bonnet chilli whole instead of chopping up.

Aubergine (Eggplant) Casserole 

Ingredients 

  • 3 small onions chopped. 
  • 1tlable spoon 
  • 3 medium green peppers chopped. 
  • large Aubergine cubed.
  • 1 tsp salt 
  • 1/4 tsp of black pepper or add according to your taste 
  • 1 clove crushed garlic 
  • x1 tin of tomatoes 
  • grated cheese 
  • Handful of crushed cornflakes

Method 

  1. Sauté the onion and green pepper on a low heat for 3 min.
  2. Cube the aubergine. If you wish you can peel the skin off. 
  3. Add the cube aubergine.
  4. Add salt, peppers, tomatoes and 1 cup of water. Cover and cook for 10 minutes until the aubergine is nearly tender. Pour into a casserole dish

Sprinkle it with cheese and cornflake crumbs. Bake uncovered at 350°F  / 180°C gas mark 4 serves 4

Sincere Praise Mission Trip to Albania // Day 4

On the final day of our mission trip, we went on an excursion to Kruje where we visited a castle and learnt a bit more about the history of the Albanian people.

Krujë

During the Middle Ages Krujë became the first capital of the Albanian state. However, the village is best known as the hometown of national hero Skanderbeg, a military commander who fought off Ottoman forces for 25 whole years before his death in 1468. Skanderbeg abandoned Islam and converted to Christianity.

As we left Albania, we committed this country and its wonderful people into God’s hands. 

Prayer points from Minister Lorna

LET US pray for all the Pastors and their families in the churches the mission team were privileged to go into.

LET US also pray for Pastors unknown to us but known to God, who faithfully serve the Lord in other parts of Albania and Kosovo, who may have little or no support or encouragement from outside.

PRAY for Pastor Festim, his wife and beautiful young family. Their love for The Lord and servant hearts were so evident!

ASK THE LORD to strengthen and encourage them as they obediently serve the Lord in Albania.

ASK THE LORD to raise up faithful and committed labourers who will come alongside Pastor Festim and the other Pastors, like ‘Hurs’ and Aarons’ to lift up their tired hands when the battle gets tough.

PRAY for the beautiful youth in all the churches, whose desire for the Lord was evident!  Things are not always easy for them, as they shared with us, but their desire for the Lord and fervour has enabled them to be fruitful witnesses for Jesus!

Let us pray this continues!

LET US DECLARE that out of the mouths of all the youth God would perfect His praise!

Psalm 8:2 (TPT)

You have built a stronghold by the songs of children.

Strength rises up with the chorus of infants.

This kind of praise has power to shut Satan’s mouth.

Childlike worship will silence the madness of those who oppose you.

PRAY that amid the darkness, the youth will remain true lights for Jesus; in their homes among unsaved family members, in schools or colleges and wherever they go.

PRAY for strong bible based Spiritual mentors to come alongside them.

PRAY that the true church in Albania will grow and be stronger than their oppressors:

Psalm 105:24

The Lord made his people grow rapidly in number and stronger than their enemies.

PRAY for an unshakable church established on The Word of God in Albania.

PRAY for the men to come out of the dark strongholds of the world and into ‘The body of Christ.

PRAY for dreams and visions of who Jesus Christ is!

 PRAY for Salvation for whole families and for prayer altars to be set up in homes.

THANK THE LORD for breaking the stronghold of Islam over the lives of family members especially among young people and using the church to reach out to them through the love of God shown in practical ways.

BREAK the spirit of nicotine and all other addictions that cause ill health and death.

Acts 26:18

…To open their eyes, so they may turn from darkness to light and from the power of Satan to God. Then they will receive forgiveness for their sins and be given a place among God’s people, who are set apart by faith in me.’

 THANK AND PRAISE THE LORD, in faith, for setting Albania free, by opening their blind eyes and turning the whole nation from darkness to His marvellous Light and from the power of Satan to God; that they will all receive forgiveness of their sins and a place among all those sanctified by faith in Almighty God!

Psalm 7:17

I will praise the Lord according to His righteousness,

And will sing praise to the name of the Lord Most High.

Sincere Praise Mission Trip to Albania // Day 3

On Sunday morning we were all up early for service at Pastor Festim’s church, the ICF (International Christian Fellowship) in Fier. 

Fier is a city in southwest Albania, with approximately 100.000 inhabitants. It is the most important industrial city of Albania and is by a tributary, surrounded by marshland.  It is the centre of the oil, bitumen, and chemical industries.  The population is mixed Orthodox and Muslim (typical of southern Albanian cities).

The city is also one of the most important strategic locations in the national roads network being at a prime position between north and south. 

Fier is also known to produce oranges, lemons and olives.

During our short time in Albania, we covered significant distances to and from the various churches we visited. Pastor Festim and his wife Elizabeth showed us extraordinary kindness and hospitality throughout.  With their two children aged 14 years and 8 years they arranged our meals and transportation and Pastor Festim often stayed with us well into the evening, translating at eating venues to ensure that everything went smoothly.  An unexpected benefit was an excursion which he arranged at the end of our visit.   

Pastor Festim’s church is a young church that was started 6 years ago. The church has many young people and children, notably young men who have taken up responsibilities in the church such as young Daniel who is fourteen and has been responsible for the sound and media system since he was twelve.  It was humbling to see how eager they were to learn how to improve their knowledge in this area.  Minister Klee, one of our team spent time showing them how they could do this.

The presence of the Lord was evident as the service begun.  There was a holy hush as those present, the majority of whom were either Muslim or from Muslim backgrounds sat listening intently as the choir sang and Rev Taylor ministered from: Luke 4:14 -20.  

Jesus came to this earth to fulfil the will of His Father.  Jesus said, “I must be about my Father’s business”.  Wherever Jesus went He made the difference.  When Jesus died on the cross, He said, “It is finished.” His work had been accomplished.  Jesus then said as you have sent me into the world, so I send them into the world. By the power of the ‘Holy Spirit’, He has sent us out to do work, we have work to do.  Rev Taylor concluded by reminding us that our business is to take this glorious message to those who are poor, to all those that need to hear it.  “Someone needs to know that there is hope and new life.  

The people of God in Albania have the power to turn Albania around, to make a difference, God makes a difference.  When we accept Jesus as our Lord and Saviour we can experience jubilee, we get everything back that the devil stole from us, health, joy, a new life.  We can then take this and share it with someone else. The power of the Kingdom is in you and all around you”. 

The message had a deep impact on those who heard it. 

After the service 15 year-old Irona who attends the ICF (International Christian Fellowship) in Fier and Abiella  14 years of age were thrilled to share on video and with others in the group about how they share Jesus with their friends at school and the challenges that they face in doing so.  They expressed that it isn’t easy, and they are sometimes rebuffed nevertheless, this does not deter them.  They told us they love Jesus and love to read the Bible. Irona told us that she reads this every day. They were so happy that that they could tell us their story, that we wanted to hear it and that we thought it was important.  They talked about how much everything that they had heard had wonderfully affected them.  

 Emanuella a mother of two said that she left Albania to seek a better life in Germany for her and her family.  She was there for two years but came back to Albania when she realised that was not where God wanted her to be. God has a work for her to do in Albania.  Her husband is currently in Italy, he would like her and their children to join him however they all want to remain in Albania. She requested prayer for the following:  

  1. That the Albanian people will be open to the good news of the Gospel.  Emanuella stated that Albanian people don’t know who to trust, they hear so many different things.
  2. She said please remember the Albanian people in prayer, they are an oppressed people.  

Emanuella said that she loved to listen to gospel songs and really liked the film ‘Sister Act’, She always wished that a choir could come to their church and couldn’t believe it when we came.  

After the meeting some of the young people in the church went onto the platform and begun singing some of the songs that the choir had sung.  It was evident to see their passion for Jesus.  Some asked if they could be taught to pray and to evangelise so that they can go out equipped into their local area and tell others about Jesus.
