Roasted Butternut Squash Soup with Crispy Kale

Ingredients 

  • 1 medium size butternut squash 
  • 1 tsp of oil olive or coconut oil  
  • 1 can of coconut milk 
  • Handful of kale
  • Vegetable stock cube 1 or 2 according to your taste 

Method 

Butternut Squash.

Peel and dice the squash. Wash and place on a baking tray. Coat with oil  

Roast in the oven at 180°C for approx. 35 min until soft. 

Place squash in a blender with the tin of coconut milk and blend until smooth. Put the contents in a pan and simmer on a low heat for 5 to 10 minutes. Feel free to add water if needed.

Kale 

Place kale in the air fryer for 2 minutes, if you don’t have an air fryer the kale can be crisped in the oven 180 for approx. 5 minutes or until crispy.

Plate butternut squash soup in a bowl. Place kale on top and voila it’s ready to serve.

No Fuss Salad

Ingredients 

Lettuce 

Cherry Tomatoes 

Method 

Wash lettuce pat dry and place in serving dish.

Wash tomatoes and pat dry and chop in half. Place tomatoes on top of lettuce. 

You can leave the salad plain or drizzle over your salad dressing of choice.

Steamed Cabbage and Salt Fish

Steamed Cabbage and SaltFish is a well-known dish from the Caribbean islands The dish can be eaten for dinner or breakfast.

Ingredients 

  • 1 medium white cabbage
  • 1 packet of saltfish. There are many varieties of salt fish. Traditionally salted cod is used, salted pollock is also common. The choice is yours
  • 2 tablespoon coconut oil or cooking oil of your choice
  • ¼ , ½  or 1 scotch bonnet pepper according to your taste
  • 2 sprigs thyme
  • 1 crushed garlic or 2 tsp of garlic powder
  • 2 carrots
  • 2 or 3 small slices of a sweet green pepper
  • 1 medium chopped onion 
  • 1 scallion 
  • black pepper and salt to taste.
  • 1/4 cup water
  • Optional all purpose or fish seasoning ( add according to your taste)

Method

  1. Put the salt fish in a pot and cover with cold water. 
  2. On medium heat boil for approx. 5 minutes, drain, and add fresh cold water again covering the fish and bring to a boil. Repeat this process until you’re happy with the saltiness when tasted; approximately boil the fish two or three times in total to get a good balance of salt in the fish. (i.e. not too salty). 
  3. Drain and leave to cool. Once cooled use a fork to shred the salt fish into pieces and set aside.
  4. Slice cabbage and give it a quick rinse.
  5. Thinly slice the carrots and rinse.
  6. Sauté saltfish, onion, garlic, pepper, thyme in your oil of choice.
  7. Add cabbage, carrots, water and stir.
  8. Cover saucepan and cook down until cabbage and carrots are tender.
  9. Add scotch bonnet pepper. 
  10. Sprinkle it with pepper and your seasoning of choice.
  11. Simmer for approx. 5 min. The dish is then ready to serve.  

(Steamed Cabbage and Saltfish can be served with boiled dumpling, boiled, green banana, yam, rice, or hard dough bread.)

Sincere Praise Mission Trip to Albania // Day 4

On the final day of our mission trip, we went on an excursion to Kruje where we visited a castle and learnt a bit more about the history of the Albanian people.

Krujë

During the Middle Ages Krujë became the first capital of the Albanian state. However, the village is best known as the hometown of national hero Skanderbeg, a military commander who fought off Ottoman forces for 25 whole years before his death in 1468. Skanderbeg abandoned Islam and converted to Christianity.

As we left Albania, we committed this country and its wonderful people into God’s hands. 

Prayer points from Minister Lorna

LET US pray for all the Pastors and their families in the churches the mission team were privileged to go into.

LET US also pray for Pastors unknown to us but known to God, who faithfully serve the Lord in other parts of Albania and Kosovo, who may have little or no support or encouragement from outside.

PRAY for Pastor Festim, his wife and beautiful young family. Their love for The Lord and servant hearts were so evident!

ASK THE LORD to strengthen and encourage them as they obediently serve the Lord in Albania.

ASK THE LORD to raise up faithful and committed labourers who will come alongside Pastor Festim and the other Pastors, like ‘Hurs’ and Aarons’ to lift up their tired hands when the battle gets tough.

PRAY for the beautiful youth in all the churches, whose desire for the Lord was evident!  Things are not always easy for them, as they shared with us, but their desire for the Lord and fervour has enabled them to be fruitful witnesses for Jesus!

Let us pray this continues!

LET US DECLARE that out of the mouths of all the youth God would perfect His praise!

Psalm 8:2 (TPT)

You have built a stronghold by the songs of children.

Strength rises up with the chorus of infants.

This kind of praise has power to shut Satan’s mouth.

Childlike worship will silence the madness of those who oppose you.

PRAY that amid the darkness, the youth will remain true lights for Jesus; in their homes among unsaved family members, in schools or colleges and wherever they go.

PRAY for strong bible based Spiritual mentors to come alongside them.

PRAY that the true church in Albania will grow and be stronger than their oppressors:

Psalm 105:24

The Lord made his people grow rapidly in number and stronger than their enemies.

PRAY for an unshakable church established on The Word of God in Albania.

PRAY for the men to come out of the dark strongholds of the world and into ‘The body of Christ.

PRAY for dreams and visions of who Jesus Christ is!

 PRAY for Salvation for whole families and for prayer altars to be set up in homes.

THANK THE LORD for breaking the stronghold of Islam over the lives of family members especially among young people and using the church to reach out to them through the love of God shown in practical ways.

BREAK the spirit of nicotine and all other addictions that cause ill health and death.

Acts 26:18

…To open their eyes, so they may turn from darkness to light and from the power of Satan to God. Then they will receive forgiveness for their sins and be given a place among God’s people, who are set apart by faith in me.’

 THANK AND PRAISE THE LORD, in faith, for setting Albania free, by opening their blind eyes and turning the whole nation from darkness to His marvellous Light and from the power of Satan to God; that they will all receive forgiveness of their sins and a place among all those sanctified by faith in Almighty God!

Psalm 7:17

I will praise the Lord according to His righteousness,

And will sing praise to the name of the Lord Most High.
